Best Pancakes

Crispy edges, fluffy middle. 15 minutes, 1 bowl.
Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp fine salt
- 1 cup buttermilk
- 1 large egg
- 2 tbsp melted butter (plus more for pan)
Steps
- Whisk dry ingredients in a bowl.
- Add buttermilk, egg, melted butter. Stir just until combined.
- Heat a buttered skillet over medium.
- Scoop 1/4 cup batter per pancake; cook until bubbles set, flip, finish 1–2 min.
- Serve with butter and maple syrup.
