Best Pancakes

Crispy edges, fluffy middle. 15 minutes, 1 bowl.

Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter (plus more for pan)

Steps

  1. Whisk dry ingredients in a bowl.
  2. Add buttermilk, egg, melted butter. Stir just until combined.
  3. Heat a buttered skillet over medium.
  4. Scoop 1/4 cup batter per pancake; cook until bubbles set, flip, finish 1–2 min.
  5. Serve with butter and maple syrup.
